campfire hash

Even though this recipe is called Campfire Hash, I've actually never had it while camping!
I love it though, it's one of my comfort food recipes!


Campfire Hash





2 Tablespoons cooking oil
1 large onion, chopped
2 garlic cloves, minced
4 large potatoes, peeled and cubed (about 2lb.)
1 lb fully cooked smoked sausage
1 can (4oz) chopped green chilies
1 can (15oz) whole kernel corn, drained


Saute onion and garlic in cooking oil until tender. Add potatoes. Cook uncoverd, over medium heat for 20 minutes stirring occasionally. Add sausage, cook and stir until potatoes are tender and well browend. About 10 more minutes more. Stir in chilies and corn, cook until heated through.
