bacon blue cheese stuffed mushrooms

I made these stuffed mushrooms for the first time for Sarah's baby shower. Both Sarah and I both like to get the bacon blue cheese burger at Medici and so when I saw this recipe I knew it'd be perfect for her shower. I loved them! You do have to like blue cheese to really appreciate them, but if you do they're awesome! Definately worthy of the favorites binder!


Bacon Blue Cheese Stuffed Mushrooms

3 stripes bacon
2 pkgs medium to small mushrooms
1 T. butter + melted butter for dipping
1/2 onion diced
1 clove garlice, sliced
3 oz cream cheese
3 oz blue cheese
1/3 cup bread crumbs

Cook bacon strips in a large skillet over medium heat until crispy; drain on paper towel.
Remove stems from mushrooms. Set caps aside and chop stems.
Add butter to skillet with bacon greese. When melted, stir in mushroom stems, onion, and garlic. Cook, stirring frequently until the onions caramelize. Once onion mixture has reached a deep, rich brown color, place into a blender along with bacon, cheeses, and bread crumbs. Blend on low until ingredients are roughly chopped and evenly combined.
Dip mushroom caps in melted butter and place on baking sheet. Stuff cheese mixture into caps and cook in preheated oven until bubbly and lightly browned. About 10 minutes. Serve warm.

4 Cheese Bacon Mac n Cheese

This was delicious! I got this recipe from October 2010 Family Circle Magazine and it's super yummy! Bacon, cheese, & noodle are some of my favorite foods so I knew they'd be awesome together and they were!


4 Cheese Bacon Mac n Cheese



1 box (1 lb) elbow noodles
6 slices bacon, diced
1 T. butter
3 T. flour
2 cups milk
1/2 tsp. onion flakes
1/4 tsp. salt
1/4 tsp. pepper
1/2 lb shap cheddar cheese, shredded
1 cup colby-jack cheese, shredded
1 cup mozzarella cheese, shredded
8 slices Kraft Deli Deluxe American cheese


Heat oven to 350 degrees. Coat 9x13 pan with nonstick cooking spray. Bring a large pot of lightly salted water to boiling. Cook noodles 7-8 minutes in boiling water then drain. Meanwhile, in medium size saucepan cook bacon over medium heat until crisp. Transfer bacon to paper towel leaving 2 T bacon drippings in pan. Add butter to bacon pan. Whisk in flour until smooth. In a thin stream, whisk in milk. Stir in onion flakes, salt and pepper. Bring to a boil over medium-high heat and simmer 2 minutes. In large bowl, toss together cheddar, colby-jack and mozzarella cheese. Remove milk mixture from heat; whisk in American cheese and 1 1/4 cups of the cheddar misture. Toss bacon pieces with remaining shredded cheese. In pasta pot, combine cooked pasta and cheese sauce. Pour half into prepared dish. Sprinkle with a generous cup of the bacon-cheese mixture. Repeat layering. Bake for 20 minutes. Turn oven to broil and broil 3 minutes for until top is lightly browned. Cool slightly before serving.
